PUMPKIN SOUP
1 Tbsp chopped fresh parsley
½ tsp thyme
4 cups chicken broth
1 chopped onion
1 clove of garlic (minced)
1,5 tsp salt
½ cup heavy whipping cream
4 whole black peppercorns
4 cups pumpkin purée
Boil the pumpkin and mash it.
Add chicken broth, onions, salt, thyme, peppercorns, garlic, and pumpkin mash to a pan, and simmer for 30 minutes.
Take the pan off the heat and purée the mixture with a hand blender until smooth.
Return to pan, add heavy cream, and simmer for another 5-10 minutes.
Pour into bowls and serve with fresh parsley.
